AOP Côtes de Provence Rosé

Tasting note
Attractive pale peach.
Subtle and elegant, with floral and white flesh fruit notes, rose water and a hint of citrus.
Smooth and full of flavour, perfectly poised with a long finish. A dash of pink peppercorn hints at the quality of this gastronomic rosé.
How to serve
Its vinification method gives this Côtes de Provence the character which puts it firmly alongside other gastronomic rosé wines. Its balance makes it an ideal match for fine dining (scallops or fish in particular).
Serve at 14°C.

Grape varieties
Grenache (75%), Cinsault (15%) and Vermentino (5%).
Terroir
Deep layers of limestone and sandstone-clay plus ancient alluvial soil with small stones ideal for fine wine making.
Harvest
Harvested at night to preserve freshness.
Vinification
1. The grape juice is protected from oxidation. A pneumatic press is used, followed by settling.
2. The free-run and press juices are separated. Cold settling (48 hours).
3. Each variety is vinified separately and carefully, according to its needs.
4. Fermented at controlled temperatures (16°C); malolactic fermentation is prevented.
Ageing
Aged on lees before blending. A small part of the wine destined for the blend is vinified in demi-muid barrels to add roundness and ageing potential.
