Palate: Complexity and finesse are the two pillars of this particular vinification, freshness completes this gustatory balance. This white is positioned on a gastronomic dominant.
How to serve
The vinification gives this Côtes de Provence blanc the essential notes that will allow it to play in the courtyard of the rosés of gastronomy: power, complexity, length, a balance that promises a better combination of food and wine, especially on Mediterranean cuisine. Ideal operating temperature: 16°C.

Terroir
Deep layers of limestone and sandstone-clay plus ancient alluvial soil with small stones ideal for fine wine making. Harvested at night to preserve freshness.
Vinification
The grape juice is protected from oxidation. A pneumatic press is used, followed by settling. The free- run and press juices are separated. Cold settling (48 hours).
Vinified in barrels and demi-muids
Fermented at controlled temperatures (17° - 19°C), no malolactic fermentation.
Ageing
Aged on lees for seven months prior to blending.
